Currently Looking for: a Cost Controller to play a hands-on role in controlling operational costs, with strong focus on F&B cost control, inventory management, and system accuracy across hotel operations. Reporting directly to the Director of Finance, the Cost Controller works closely with operational teams to ensure accurate cost control and financial discipline across hotel operations.

Job Type: Full time, Seasonal contract

Location: Corfu, Greece

As a Cost Controller, you will play a key role in safeguarding financial discipline across hotel operations, with a strong focus on F&B cost control, inventory management, system accuracy (MICROS / POS) and supplier offer monitoring.

You will work closely with the Finance and operational teams to ensure accurate cost tracking, proactive variance analysis, and continuous improvement of cost efficiency, supporting both financial performance and operational excellence.

Key Responsibilities :

Operational Cost Control & Systems:

  • Monitor daily operational costs across all departments, with particular focus on F&B operations
  • Ensure accurate setup, maintenance, and monitoring of MICROS / POS systems, including items, recipes, prices, and consumption
  • Perform menu costing, recipe costing, and theoretical vs actual cost analysis
  • Review and validate supplier offers, pricing agreements, and cost changes in coordination with Procurement and Finance
  • Support accurate mapping of items between MICROS, inventory systems, and accounting

Inventory & Stock Management :

  • Oversee and participate in monthly stock counts (food, beverage, operating supplies)
  • Analyze stock variances, wastage, spoilage, and operational losses
  • Monitor inventory turnover and support departments in maintaining optimal stock levels
  • Ensure proper documentation and reconciliation of stock movements

Reporting & Analysis :

  • Prepare cost-related reports and analysis for the Finance Director
  • Track recurring cost variances and flag trends, risks, or inefficiencies
  • Support month-end closing activities related to cost control and inventory
  • Provide clear, actionable insights to support decision-making

Collaboration & Controls:

  • Act as a point of escalation for cost discrepancies and assist departments in resolving issues efficiently
  • Support and guide department heads on cost awareness, budget adherence, and best practices
  • Ensure compliance with internal controls, financial procedures, and audit requirements
  • Handle cost-related queries in a professional, timely, and solutions-oriented manner

  • Support sustainability initiatives by monitoring resource usage (food waste, consumables, utilities where applicable)
  • Promote cost-efficient and environmentally responsible practices in daily operations

What We’re Looking For:

  • Previous experience in hotel cost control, preferably in a luxury or resort environment
  • Strong understanding of F&B cost control, MICROS / POS systems, and inventory processes
  • Analytical mindset with attention to detail
  • Ability to collaborate effectively with operational teams
  • Strong Excel and reporting skills
