Based at Mandarin Oriental, Costa Navarino within the Stewarding Department in Pylos, Messenia, Greece, the Assistant Chief Steward is responsible for the day-to-day cleanliness of the kitchen back of house areas. The Assistant Chief Steward reports to the Back of House Manager.
As Assistant Chief Steward, you will be responsible for the following duties:
- Maintain proper storage, purchasing and repair of operating equipment, as well as the cleanliness and tidiness of the kitchen back of house areas (pot wash and dishwasher areas)
- Oversee chemical expenditure and control of chemical purchasing
- Inspect internal files monthly to ensure proper procedures and updates are in place
- Implement HACCP procedures and follow up on the training of the Stewarding team
- Ensure that all designated action points from daily briefings or other operational meetings are being followed by the Stewarding team
- Oversee special projects as assigned by the Back of House Manager and the Executive Chef
