Culinary Excellence

  • Execute traditional and contemporary sushi & sashimi at the highest international level
  • Mastery of knife techniques, fish aging, rice preparation, and temperature control
  • Design and continuously refine a premium sushi menu aligned with Mylos’ identity
  • Incorporate Mediterranean and Greek influences where appropriate, without compromising authenticity
  • Ensure immaculate plating, balance, and consistency

Guest Experience

  • Interact confidently with high-profile, VIP, and international guests
  • Present omakase experiences and explain ingredients, techniques, and philosophy
  • Collaborate closely with front-of-house and sommelier teams

Απαραίτητα Προσόντα

Essential

  • Minimum 7–10 years experience as a Sushi Chef
  • Formal training in Japanese cuisine (Japan-based experience strongly preferred)
  • Proven experience in luxury restaurants, 5-star hotels, or Michelin-level venues
  • Exceptional knife skills and deep knowledge of fish species and seasonality
  • Strong leadership, organization, and stress management skills

Highly Desirable

  • Experience with omakase and chef’s counter concepts
  • International experience (Europe, Middle East, Japan, US)
  • Creativity balanced with discipline and respect for tradition
  • Fluency in English (Greek or Japanese is a plus)
