Based at the Mandarin Oriental, Costa Navarino within the Food & Beverage Department in Pylos, Messenia, Greece, the Senior Sommelier supports the Head of Wines in delivering an exceptional wine experience, leading by example on the floor, mentoring Sommeliers, and ensuring operational excellence, cost control, and guest satisfaction. The Senior Sommelier reports to the Head of Wines.
As Senior Sommelier, you will be responsible for the following duties:
- Support the Head of Wines in leading the sommelier function during service, ensuring consistent service excellence, strong team performance, and exceptional guest satisfaction. Assist the Head of Wines with administrative duties
- Drive kind and generous service by role-modelling respectful, professional behavior towards both guests and colleagues, while maintaining daily communication with F&B and Culinary colleagues
- Demonstrate outstanding food and wine knowledge, confidently recommending and pairing wines, supporting wine list execution, and enhancing the overall dining experience
- Mentor Sommeliers, assist with the wine training and development of the F&B Service and Bar colleagues and support ongoing learning initiatives
- Support operational controls including beverage charging accuracy, stock management, cellar organization, and preparation for monthly stock takes, while ensuring compliance with Mandarin Oriental standards and budgets
- Attend required meetings and report maintenance issues
