As an Assistant Restaurant Manager / Assistant Maître, you will support the Maître in overseeing the daily operations of Byzantino, the hotel’s all-day dining brasserie. In this role, you will ensure that every guest enjoys a seamless and memorable dining experience, while upholding the highest standards of food and beverage service in line with Conrad brand standards.
You will assist in supervising the dining room team, coordinating service flow, and maintaining excellence across all aspects of the guest journey. With a strong focus on quality, efficiency, and attention to detail, you will contribute to achieving both operational and financial objectives. Responsibilities
Operations
- Assist the Maître in overseeing the daily operations of the restaurant, ensuring smooth and well-coordinated service across breakfast, lunch, and dinner periods.
- Maintain exceptional standards of food quality, presentation, and overall service excellence.
- Monitor the dining room continuously to ensure guest satisfaction, addressing feedback and resolving concerns promptly and professionally.
- Coordinate reservations and manage guest seating to optimize flow, efficiency, and overall experience.
- Collaborate closely with the kitchen team to ensure clear communication and timely delivery of dishes.
- Ensure full compliance with health, safety, and hygiene regulations, maintaining a clean, refined, and well-organized dining environment.
- Support the Maître with reporting, shift summaries, guest feedback logs, and system updates (Micros / Opera / ResDiary).
- Monitor service KPIs and guest feedback to continuously refine and elevate the dining experience.
Team Leadership
- Supervise, train, and motivate the dining room team to consistently deliver exceptional, attentive service.
- Support recruitment, onboarding, and ongoing development of team members.
- Lead by example, fostering a positive, professional, and collaborative working environment.
- Assist in preparing staff schedules in line with business levels and operational needs.
Guest Experience
- Welcome guests warmly, escort them to their tables, and present menus with confidence and in-depth knowledge of offerings.
- Ensure a personalized, seamless, and memorable dining experience at all times.
- Build strong relationships with guests, including repeat and VIP clientele.
- Handle guest concerns efficiently, escalating when necessary to ensure complete satisfaction.
Financial & Administrative
- Support cost control initiatives, including labor management and inventory oversight.
- Contribute to achieving revenue targets and maximizing overall profitability.
- Monitor stock levels, assist with ordering, and coordinate effectively with suppliers.
- Contribute to reporting processes and performance analysis.
Brand Standards
- Uphold Conrad and Hilton brand standards, ensuring alignment with luxury hospitality expectations.
- Maintain consistency in service delivery in line with LQA standards and the brand’s service culture.
Requirements
- Minimum of 2 years’ experience in a similar Assistant Restaurant Manager role, preferably within a luxury hotel or fine dining environment.
- Degree or diploma in Hospitality Management or a related field will be considered an asset.
- Strong knowledge of food & beverage operations, with experience in all-day dining concepts being highly desirable.
- Excellent customer service skills, with a genuine passion for delivering refined and memorable dining experiences.
- Proven ability to lead, motivate, and develop a team, combined with strong organizational and multitasking skills.
- Solid understanding of POS systems and restaurant financials, including cost control and performance awareness.
- Familiarity with fine wines and the ability to confidently recommend pairings to enhance the guest experience.
- Excellent verbal communication skills in both English and Greek; additional languages will be considered a strong advantage.
- Flexibility to work in a dynamic environment, including weekends and holidays.
